🍋 Lemon Millet Flakes
Tangy & Refreshing Millet Snack
Preparation Time
10–15 mins
Ingredients
Millet Flakes (any): 1 cup (100 g approx)
Lemon: ½
Oil: 2 tsp
Cashew / Groundnut: As required
Mustard Seeds & Dals: ½ tsp
Onion: 1 (chopped)
Green Chilli: 4
Curry Leaves: As required
Salt: As required
Water Ratio for Flakes
Thinai, Samai, Varagu, Kuthiraivalli (Small flakes) → 1 cup flakes : ¾ cup water
Kambu, Red Cholam & Traditional Rice (Large flakes) → 1 cup flakes : 1¼ cup water
Preparation Method
Heat oil in a pan and temper mustard seeds and dals.
Add cashew/groundnut and sauté until golden.
Add onion, green chilli, and curry leaves. Sauté well.
Add lemon juice and salt. Mix gently.
Add millet flakes and sprinkle water as per the ratio.
Cover and cook on low flame for 3 minutes (small flakes) or 5 minutes (large flakes).
Mix well and serve hot.

🍛 Millet Flakes Veg Pulao
Quick & Flavorful Millet Meal
Preparation Time

Ingredients
Millet Flakes (any): 1 cup (100 g approx)
Oil: 2 tsp
Whole Spices: Bay leaf, cinnamon, clove, cardamom (1 each)
Onion: 1 (sliced)
Green Chilli: 4
Ginger Garlic Paste: ½ tsp
Tomato: 1
Mixed Vegetables: Carrot, potato, peas, beans, capsicum
Turmeric Powder: 1 tsp
Coriander & Mint Leaves: For garnish
Salt: As required
Water Ratio for Flakes
Thinai, Samai, Varagu, Kuthiraivalli (Small flakes) → 1 cup flakes : ¾ cup water
Kambu, Red Cholam & Traditional Rice (Large flakes) → 1 cup flakes : 1¼ cup water
Preparation Method
Add hot water to 1 cup of flakes and soak for 5 minutes (small flakes) or 10 minutes (large flakes).
Heat oil in a pan and sauté bay leaf, cinnamon, clove, and cardamom.
Add sliced onions, green chilli, and ginger garlic paste. Sauté until golden brown.
Add tomato and cook until soft. Then add mixed vegetables and salt. Cook until half done.
Add soaked flakes and turmeric powder. Mix gently and sauté for 1 minute.
Garnish with coriander and mint leaves. Serve hot.

🍯 Sweet Millet Flakes
Quick & Nutritious Sweet Treat
Preparation Time

Ingredients
Millet Flakes (any): 1 cup (100 g approx)
Milk: ¾ cup (small flakes) / 1¼ cup (large flakes)
Nuts & Dried Fruits: Cashew, almond, raisins (5 each)
Country Sugar: 4 tsp
Grated Coconut: 4 tsp
Cardamom Powder: 1 pinch
Ghee: 1 tsp (optional)

Thinai, Samai, Varagu, Kuthiraivalli → Small flakes
Kambu, Red Cholam & Traditional Rice → Large flakes
Preparation Method
Soak millet flakes along with nuts and dried fruits in hot milk.
For small flakes, soak for 5 minutes; for large flakes, soak for 10 minutes.
Add country sugar, grated coconut, and cardamom powder.
Finally, add ghee (optional) and mix well.
Serve warm or chilled as desired.

🥣 Millet Flakes Koozh
Cooling & Traditional Millet Drink
Preparation Time

Ingredients
Millet Flakes (any): 1 cup (100 g approx)
Curd: ½ cup
Onion: As required (finely chopped)
Salt: As required
Water Ratio for Flakes
Thinai, Samai, Varagu, Kuthiraivalli (Small flakes) → 1 cup flakes : ¾ cup water
Kambu, Red Cholam & Traditional Rice (Large flakes) → 1 cup flakes : 1¼ cup water
Preparation Method
Take 1 cup of millet flakes and grind coarsely (or use as it is).
Add 1½ cups of hot water and soak for 10 minutes.
Allow it to cool, then add curd or buttermilk.
Adjust consistency by adding water as needed.
Add chopped onion and salt. Mix well.
Serve cool. Makes approximately 4 glasses of koozh.

Millet Flakes (any): 100 g
Rice Flour: 2 tbsp
Oil: 2 tsp
Onion: 1 (finely chopped)
Green Chilli: 2 (chopped)
Carrot: 1 (grated)
Curry Leaves & Coriander Leaves: As required
Salt: As required
Water Ratio for Flakes
Thinai, Samai, Varagu, Kuthiraivalli (Small flakes) → 1 cup flakes : ¾ cup water
Kambu, Red Cholam & Traditional Rice (Large flakes) → 1 cup flakes : 1¼ cup water
Preparation Method
Soak 100 g of millet flakes in hot water for 5 minutes and mash well.
Add rice flour, chopped onion, green chilli, grated carrot, curry leaves, coriander leaves, and salt.
Mix everything into a thick batter consistency.
Heat a dosa tawa, spread the batter into medium-sized adai.
Cover with a lid and cook for 2 minutes on each side until golden brown.

🍢 Millet Flakes Tikka
Crispy & Healthy Millet Snack
Ingredients
Millet Flakes (any): 1 cup (50 g approx)
Oil: 4 tsp
Fennel Seeds: 1 tsp
Green Chilli: 1 (finely chopped)
Onion: 1 (finely chopped)
Ginger Garlic Paste: 1 tsp
Carrot: 1 (grated)
Garam Masala: ½ tsp
Chilli Powder: ½ tsp
Coriander Leaves: As required
Salt: As required (use less)
Water Ratio for Flakes
Thinai, Samai, Varagu, Kuthiraivalli → 1 cup flakes : ¾ cup water
Red Cholam & Traditional Rice Flakes → 1 cup flakes : 1¼ cup water
Preparation Method
Add 1 cup of hot water to 1 cup of flakes and soak for 3 minutes.
Drain excess water and mash well.
Heat 1 tsp oil in a pan and sauté fennel seeds.
Add onion, green chilli, ginger garlic paste, chilli powder, garam masala, salt, and coriander leaves. Sauté well.
Add grated carrot and cook for a minute.
Add mashed millet flakes and mix thoroughly.
Shape into tikkas as desired.
Shallow fry on both sides until golden brown.
