🍮 Millet Payasam Sweet & Traditional Millet Dessert Preparation Time 15 mins Ingredients Thinai (Foxtail Millet): ½ cup (50 g approx) Pasiparuppu (Moong Dal): ¼ cup Country Sugar: ¾ cup Milk: 2 cups Water: 4 cups Cardamom: 4 Cashew & Raisins: Few Preparation Method Lightly roast thinai and moong dal. Add 4 cups of water and a pinch of salt. Pressure cook for 4 whistles. Add milk and boil for 5 minutes. Add country sugar and cardamom. Mix well. Boil for another 5 minutes until it thickens. Finally, add fried cashews and raisins.

🍛 Millet Veg Biryani Aromatic & Healthy Millet Delight Preparation Time 20 mins Ingredients Millet (any): 1 cup (100 g approx) Oil: 2 tsp Whole Spices: Bay leaf, cinnamon, clove, cardamom (1 each) Onion: 1 (sliced) Green Chilli: 4 Ginger Garlic Paste: ½ tsp Tomato: 1 Mixed Vegetables: Carrot, potato, peas, beans, capsicum Turmeric Powder: 1 tsp Coriander Leaves: For garnish Preparation Method Millet : Water Ratio – 1 : 2½ Heat oil in a pan and sauté bay leaf, cinnamon, clove, and cardamom. Add sliced onions, green chilli, and ginger garlic paste. Sauté until golden brown. Add tomato and cook until soft, then add mixed vegetables and salt. Cook until half done. Add soaked millet (soaked for 30 minutes) and sauté for 1 minute. Add 2½ cups of water and pressure cook for 3 whistles. Garnish with fresh coriander leaves and serve hot.

🍛 Kongu Style Arisi Paruppu Traditional & Flavorful Millet Meal Preparation Time 15 mins Ingredients Millet (any): 1 cup (200 g approx) Toor Dal: ½ cup Oil: 2 tsp Mustard, Jeera & Dals: ½ tsp Small Onion: 15 Green Chilli: 4 Garlic: 4 cloves Tomato: 1 Sambar Powder: 1 tsp Turmeric Powder: ½ tsp Preparation Method Soak millet and toor dal for 30 minutes. In a pressure cooker, heat oil and add mustard seeds, jeera, and dals. Sauté small onions, green chilli, tomato, garlic, and curry leaves. Add sambar powder, turmeric powder, and salt. Mix well. Pour 2½ cups of water and pressure cook for 3 whistles on medium flame.

🥞 Millet Idli / Dosa Healthy Fermented Millet Batter Preparation Time ~10 mins (excluding fermentation) Ingredients Millet (any): 1 cup Urad Dal: ¼ cup Fenugreek: ½ tsp Salt: 1 tsp Preparation Method Wash millet once. Wash urad dal and fenugreek separately and soak for 1 hour. Grind millet separately. Grind urad dal and fenugreek separately into a smooth batter. Mix both batters, add salt, and allow to ferment for 8 hours. Prepare soft idlis or crispy dosas using the fermented batter.

🍲 Millet Pongal Healthy & Nutritious Millet Breakfast Preparation Time 15 mins Ingredients Millet (any): 1 cup (200 g approx) Moong Dal: ½ cup Oil/Ghee: 2 tsp Cumin Seeds: 2 tsp Pepper: 1 tsp Ginger (grated): 2 tsp Asafoetida: ½ tsp Green Chilli & Curry Leaves: 4 chillies + few leaves Cashew: 10 Preparation Method Soak millets and moong dal for 30 minutes. In a pressure cooker, heat oil or ghee. Sauté cashews, cumin seeds, pepper, ginger, asafoetida, green chilli, and curry leaves. Add soaked millet and moong dal to the cooker. Add 6 cups of water and salt as required. Pressure cook for 4 whistles.
